Ingredient: Baby Turnips
Category: Vegetables
Season: June to July
Most very small turnips (also called baby turnips) are speciality varieties.
These are only available when freshly harvested and do not keep well.
Most baby turnips can be eaten whole, including their leaves.
Baby turnips come in yellow-, orange-, and red-fleshed varieties as well as white-fleshed.
Their flavour is mild, so they can be eaten raw in salads like radishes.
To cook baby turnips
Dice 1 lb (450 g) of peeled turnips into ¾ inch (2 cm) cubes.
Steam them for 3 minutes, sprinkled with a little salt,
Sauté in melted butter, tossing them around for about 10 minutes, until tender.
This quantity of turnips will serve 4 people . |
